Lounge Cocktail:
July is here. The seventh month of the year. It is hard to believe we have passed the halfway point. There are cookouts, grass to mow and ball games to attend. Anything cool and refreshing is welcome. What could be more welcome than a cool, fruity and refreshing dose of alcohol.

COMFORT COLADA
From our friend's at Southern Comfort®.

1 1/2oz. Southern Comfort
1 oz. Cream of coconut
2 oz. Pineapple Juice

Place several ice cubes in a blender. Add Southern Comfort, cream of coconut and pineapple juice. Blend until smooth. Garnish with a cherry.

Sex On The Beach
Vodka originates from the Russian word voda (water). There is water at the beach. The beach makes me feel good. Water is good.

1 ounce vodka
1 ounce peach schnapps
2 ounces of orange juice
2 ounces of cranberry juice

Pour ingredients over ice, stir and enjoy.

Lounging With A Video:
Castaway

Starring Tom Hanks, A Volley Ball and Helen Hunt. I thought this movie was good, but not great. I kept expecting an animal attack of some kind, but it never happened. I thought it was film etiquette if you got cut while swimming, a shark ate you; or if you heard a noise in the dark jungle, eventually you would be terrorized by a beast of some kind. But no, not on this castaway's Island. Nothing bigger than a crab and nothing scarier than loneliness.

Traffic

Starring Michael Douglas and some other people. We watched this movie late and I fell asleep about 15 minutes after it started. Friend's of mine told me it was really good.

Cooking tips:

Summer Food
To achieve really sweet and tasty corn, never boil the corn, more than 3 minutes. Just drop the corn in boiling water, return to a boil and wait for three minutes. The longer it boils the less flavor it retains. Not to say in 8 minutes it wouldn't be edible, but it would not be as scrumptious if you had only boiled it for 3. So pay attention and do not let your corn boil in vain.

Grill Safety
Seeing that we are in peak grilling season I think it is necessary to talk about grill safety, with a focus on fire. When cooking on a grill there is always the chance of the fire getting a little out of control. If by some chance you catch on fire or someone near you catches on fire, under no circumstance should you throw a cocktail on them. Even if you just freshened up the ice, it is not a good idea.

The B.K. Lounge Grill: Brazilian Bar-B-Que and Salad

I had the opportunity to lounge in Botiva, Brazil with a group from Skydive Chicago. It was a great trip. When we first arrived at the drop zone. I realized very quickly that nobody, and I mean nobody, spoke English. It was raining we didn't know squat about acquiring a beer in Portuguese, I approached two guys grilling out. They looked like they where having a pretty good time and they both had what looked like beer. By the time I pointed and smiled he was handing me a beer. I knew I was in the right place. We spent 4 days in this great little town in Brazil. On the third night of our stay our host, Theresa made us what she called, Brazilian Bar-B-Que.

Anyway, I saw Theresa out at the Skydive Chicago entertainment complex and she asked if I had made the dinner she had prepared in Brazil. I had, and I remembered how tasty it was. Seeing it is grilling season I thought this would be the perfect time to share with everyone. The measurements in this recipe are subject to taste. Theresa did not measure any of the ingredients when she prepared this meal but I will give you measurements that will get you started.

Brazilian B-B-Q

In Brazil we used large beef briskets, but I had seen several other cuts of meat cooked this way, including ribs.
Course salt
4 Cups fine bread crumbs
2 Tablespoons onion powder
2 Tablespoons powder garlic
2 Tablespoons dried celery or ground celery seed

Take the course salt and pack it all around the meat. This might seem strange to some of you but hang with me. After rubbing and patting the meat with salt, you can put it in the fridge while you prepare the bread crumbs and salad.

In a large bowl mix the bread crumbs, onion powder, garlic powder and dried celery or ground celery seed. I found that more garlic and onion are a good thing. It really depends on your personal taste.

Salad

1 Onion
2 Tomatoes
teaspoon Salt
1/4 cup Vinegar

Slice tomato bite size. Quarter the onion and cut into thick slices. Add salt and vinegar and toss. Again the ratio for this salad depends on what you like so feel free to play with it. The B.K. Lounge Food Science Technician, Jenny, F.S.T., serves a similar salad with crumbled feta cheese, olive oil and oregano added. Very delicious.

Grill the meat on a hot grill until medium rare, or if you like it cooked more, leave it on the grill longer. A lot of the salt will fall off. Do not put more salt on the meat. When done serve the bar-b-q cut into bite size piece's that you dip in the seasoned bread crumbs. The salad was served with sliced bread (looked like French bread) that had been toasted on the grill until toasted and drizzled with olive oil.
