Lounge Cocktail: Cinco De Mayo
Cocktail adapted from Webtender

Ingredients:
• 2 1/2 oz añejo or white Tequila
• 1 oz Grenadine
• 1 oz Rose's sweetened lime juice
• Lime wedges

Mixing instructions:

Heart Attack Man

A man suffered a serious heart attack and had open heart bypass surgery. He awakened from the surgery to find himself in the care of nuns at a Catholic hospital. Kingdom Of Heaven

Starring: Orlando Bloom, Liam Neeson (for a while), Jeremy Irons, Ed Norton and many others.

A young Blacksmith (orlando Bloom) after some very bad circumstance in his life boils over, decides to follow a crusade to Jerusalem. We loved this film on two levels. First and foremost, they blew up and fought about everything. Lots of hand to hand 12th century brutality. On a deeper level we felt it was a great lesson about the difference between religion and faith and where one falls short of another. Ridley Scott should be proud of this film and how it portrays 12th century religion and the truly faithful of the time. 4 thumbs up and an extra nod of approval for dramatic spiritual learning experience.

Beneath Lock Ness

Don't waste your time. As much as I was expecting a documentary it turned out to be a "Thriller" and I use that term loosely. If you rent this movie feel free not to tell me about your experience because I am not wasting any of my time discussing this film.

Spanglish

Starring: Adam Sandler, Tea Leoni, Paz Vega, Cloris Leachman, Shelbie Bruce, Sarah Steele and many more.

Although we took some time to see this film we would have to recommend this film. The story is of a young Mexican girl who is writing to the admissions office of an Ivy League school and telling the story of a large part of her childhood. Her Mother (Vega, Meeeow), who raised her by her self, brings her to America as to give her a better chance in the world. She eventually finds work in a very wealthy neighborhood as a house keeper for a wealthy Chef, John Clasky (Sandler). His wife (Leoni) their 2 children and his wife's Mother also reside in the house.

Between Clasky's intense job, his wife's intense personality and the Mother's intense background the story quickly evolved into a lot of humor. We found it to be touching and very funny even though I personally have no memory of anything exploding or even a sniper, we as a group recommend this film.

A great date film. 4 thumbs up and a wink.

The B. K. Lounge Eats: Chicken satay skewers and special rice

This is basically Thai food which is loved here at The Lounge. This easy recipe is sure to please.

For the chicken
• 1⁄2 chicken breast, cubed
• 2 tbsp honey
• 1 lime, juiced
• 1 tsp curry powder, whatever kind you like.
• 4 tbsp soy sauce
• 1 clove garlic, peeled and crushed
• Salt and ground black pepper to taste
• Skewer - not for eating

For the rice
• 1 cup of uncooked rice
• 1 handful of cilantro leaves, chopped
• 1 **Roasted red pepper sliced thin
• 1 Handful of chopped chives or
0 green onion if you have to.
• Salt and freshly ground black pepper
• 1 Teaspoon of olive oil for drizzling.

*Fresh Lemon Grass can be found at Asian Markets and it looks like a big hard stalk of grass.

**You can roast a red pepper by cutting it in half and placing it in the broiler for 15 minutes or until skin is mostly black. Place the pepper in a bag for 15 minutes to sweat and then peeling of the skin.

Preheat the oven to 425 degrees.

Cook the rice according to packet instructions. Rule of thumb is twice the amount of water than rice, bring to a boil for 4 minutes. Cover and turn off. Let sit covered for about 20 minutes

Mix the honey, lime juice, curry powder, soy sauce and garlic and seasoning together in a bowl until combined. Add the chicken pieces and toss together to coat maybe letting it sit for a couple of minutes to take it all in.

Skewer the chunks of chicken on skewers. Heat a little oil in a pan big enough for your skewers to fit in and sear the chicken skewer in the pan for 1-2 minutes until lightly brown or however you like it. If you are using cast iron transfer the entire pan to preheated oven or place on cookie sheet an place in the oven and cook for 10-12 minutes, or until the chicken is thoroughly cooked through.

When rice is done toss in the coriander, roasted red pepper slices, chives and seasoning and drizzle with oil. lightly toss together and heat through for one minute. Place some rice on your plate and top with chicken then enjoy. Nutritious and delicious.
