Old Bread at The B.K. Lounge: Part 2

If you read our first article on old bread or if you receive the Lounge Lizard and read the recipe for Meat Loaf, you know that old bread has a purpose, and a very simple and yummy purpose. And old bread at the B.K. Lounge has balls, or should I say meat balls.

Meatballs are easy to make and can be adapted into a variety of cuisine's. Lets start.

Meatballs:
1 1/5 lbs. ground beef
2 eggs
1/8 teaspoon garlic powder
1/2 cup diced onion
2 tablespoons parsley flakes
1/2 cup old bread crumbled,. Bread crumbs can be bought at the grocery if you are out of old bread.

Mix all this together in a bowl. And make meat balls that are a little bigger than a golf ball.

Bake on a cookie sheet in a preheated 350 degree oven for about 18 minutes.

While the meat balls are cooking start your noodles. And start making a sauce. Below are three to choose from and since meatballs are traditionally served with spaghetti sauce you will not find it here. That would be boring.

We will show you Sweet and Sour Cranberry Sauce, Chipotle Sauce and a Polynesian Sauce.

Sweet and Sour Cranberry Sauce
1 cup whole cranberry sauce (Dec. - Lounge Lizard)
1/2 cup ketchup, catsup, whatever
2 tablespoons chopped onion
1 teaspoon vinegar
2 tablespoon brown sugar

Mix together in a sauce pan and heat until sauce like.

Chipotle Sauce
1 lb. 12 oz. can stewed tomatoes
6 oz. tomato paste
1/2 cup chopped onion
1/8 teaspoon garlic powder
dash of cayenne pepper
2 Chipotle peppers and
2 table spoons adobo sauce - You buy Chipotle peppers already in adobo sauce at any Mexican market that is worth their salt. We will be discussing peppers and Mexican food in a future newsletter.
Salt and pepper to taste

Mix together in a sauce pan and heat until sauce like.

Polynesian Sauce
15 oz can pineapple chunks - drained, but save the juice.
Pine apple juice with water added to make 1 cup
2 tablespoons ketchup
2 tablespoons vinegar
1 tablespoon cornstarch or arrow root
1 tablespoon brown sugar
1 tablespoon soy sauce
1/2 teaspoon instant beef bullion granules
1/4 teaspoon red pepper flakes
1/2 red bell pepper, diced

Mix everything except pineapple chunks and red bell pepper together in a sauce pan and heat until the sauce thickens. Then add the pineapple chunks and red bell pepper.

Serve any of these sauces over your meatballs with some pasta and enjoy.
